Salsa time....

This past week-end I, my husband, children, and in-laws piled into the van and headed for Naches, Wa. where we load up as much produce as the van can hold for canning. Luckily, we were able to find tomatoes, walla walla onions, apricots, cherries, and corn! A nice haul for one afternoon. All week I have been putting up jam, and corn, and today, it is salsa time...and then I'm finished for a few weeks until the peaches come out. My family loves salsa and will probably make quick work out of the 60 jars...putting it on just about everything they eat.

I remember when my oldest was still home, he would come in from work or a date and ask if he could have a few chips and salsa for a snack. Of course, I said sure and knew that it meant the whole bag of chips and the entire jar of salsa! My oldest daughter did that too, but with quart jars of dill pickles. It got to the point that I stopped cutting neat little strips of cukes and layering them ever so neatly in the jars to cutting up chunks and putting as many chunks in the jar that would fit...but, she loved them!

People always ask me how I find the time to do all this canning with everything I have on my plate...it's simple really, I love to do it! I believe that we can always find the time to do what we want to do...if we really don't want to do it, then it is very easy to set it aside with 'gosh, I would but, I just don't have the time' How many of us have heard that before or even said it ourselves? I know I have and I am also guilty of saying that a time or two or even ten.

Needless to say, I have not given much time to this blog, my book, or my website. I will tell you this, my webpage is undergoing some changes that my son is working on and he assures me it will be fantastic when it is ready in the next couple of weeks...I can't wait to see it.
